Gently mix the turkey, roasted peppers, panko, egg, garlic, smoked paprika, salt, and pepper. Stop as soon as it comes together.

Form 4 patties and press a little dimple into the middle so they stay flatter as they cook.

Cook on a lightly oiled skillet or grill for 5 to 6 minutes a side, until they hit 165 F in the center.

Stir the mayo and Dijon together while the burgers rest for a minute.

Toast the buns, spread on the mustard mayo, and stack with arugula and the burgers.
