Thai Basil Chicken Stir-Fry

Stir together the soy sauce, oyster sauce, fish sauce, and brown sugar so it's ready when the pan is hot.

Heat a skillet or wok until it's ripping hot, add a little oil, and cook the chicken in one layer so it browns instead of steams.

Add the shallot, garlic, chiles, and green beans. Stir-fry for 2 to 3 minutes.

Pour in the sauce and toss for another minute until it coats everything instead of sitting at the bottom.

Kill the heat, fold in the basil, and get it over rice while it's still hot.
