One-Pan Lemon Herb Fish with Crispy Potatoes

Ingredients

1 1/4 lb baby potatoes, halved
3 tbsp olive oil
4 white fish fillets, about 6 oz each

Instructions

Roast the potatoes with 2 tablespoons of olive oil, salt, pepper, and oregano at 425 F for 20 minutes until the cut sides start to brown.

Mix the garlic, lemon zest, remaining oil, and half the dill. Rub that over the fish.
