Brown the ground chicken in a hot skillet, breaking it up so you get lots of browned bits.

Add the mushrooms, white parts of the scallions, garlic, and ginger. Cook until the mushrooms give up their water.

Stir in the tamari, rice vinegar, and chili crisp, then cook for another minute until everything looks glossy.

Taste it. Add a squeeze of lime if it needs a little wake-up.

Spoon into lettuce cups and finish with the green scallion tops.
